Cookie Butter Bars

Soft and chewy Cookie Butter Bars with tons of flavor and made with actual cookie butter and cookie topping.

Ingredients

1/2 cup butter, melted

1/2 cup cookie butter

1 cup brown sugar

1 egg

2 teaspoons pure vanilla extract

1 1/2 cups all-purpose flour

1/2 teaspoon cinnamon

1/4 teaspoon salt

68 cinnamon flavored cookies, broken into pieces (I used cinnamon Scooby Snacks 🙂 but you can use any cinnamon cookie)

Instructions

  1. Preheat your oven to 350 degrees and line an 8×8 baking pan with parchment paper or spray well with non stick spray.
  2. In a large bowl, mix the melted butter, cookie butter and brown sugar until combined.
  3. Add the eggs and vanilla and mix again until smooth. Add in the flour, cinnamon and salt. Mix again until combined, dough will be slightly thick.
  4. Press the dough into the baking pan so it’s evenly spread. Break up and crumble the cinnamon cookies over the top and press down into the dough slightly.
  5. Bake for 25-30 minutes. Leave them in the pan to cool for at least 40-60 minutes so the bars set up. They will be too soft and gooey if you try to cut them immediately.
  6. Once cooled completely, cut into bars and enjoy!
