Ingredient Notes

  • Cottage Cheese: Hiland Dairy is my choice for Cottage Cheese, it’s just better than the rest. The flavor and texture make this recipe super creamy and mousse like. You can use small or large curd for this recipe. 

  • Cocoa Powder: The chocolate flavor of the mousse comes from the cocoa powder. If you are a dark chocolate fan, just add a little more cocoa powder

  • Maple Syrup: Maple Syrup gives the chocolate mousse its sweetness and you can make it as sweet as you like. You can also use honey or any other sweeteners you have on hand. 

  • Vanilla Extract: A small amount adds to the flavor depth of the mousse.

  • Salt: Just a bit of salt pairs so well with chocolate to bring out the richness of the chocolate flavor

Step By Step Instructions

Add all the ingredients: Everything goes into the blender or food processor. Add the Hiland Cottage Cheese, cocoa powder, maple syrup, vanilla and salt. 

 

Blend: Blend it all together until smooth and creamy. Look for any white bits of cottage cheese and blend until you don’t see any remaining. Scrape the sides as needed. The mixture will be thick, creamy and smooth. 

 

Spoon: Spoon and pour the mixture into a bowl. Scrape the sides to get all the mixture. 

 

Refrigerate: Place the bowl of Cottage Cheese Chocolate Mousse into the fridge to set up completely. At least 30 minutes. 


Serve and Eat: Spoon the Chocolate Mousse up and enjoy the creamy goodness packed with protein! (or just keep a spoon in the bowl and eat, that’s how I roll)

  • Top with a dollop of whipped cream

  • Add fresh fruit like sliced strawberries, blueberries or raspberries

Ingredients

1 cup Hiland Dairy Cottage Cheese

2 Tablespoons Cocoa Powder

2 Tablespoons Maple Syrup

¼ teaspoon vanilla extract

Pinch of salt

Instructions

 

  1. In a blender, add the 1 cup Hiland Cottage Cheese, 2 Tablespoons Cocoa Powder, 2 Tablespoons Maple Syrup, ¼ teaspoon vanilla extract and pinch of salt all together. Blend until smooth, mixture should be thick. If still runny, add a spoonful more cottage cheese.

  2. Once blended, pour mixture into a bowl and place in the fridge to set up for at least 30 minutes.

  3. Once set, spoon up a serving and enjoy! Add a dollop of whipped cream or berries to top it off!
