This Cottage Cheese Banana Pudding is one of those recipes that feels way more indulgent than it actually is. It’s ultra creamy, lightly sweet, packed with protein from the best Cottage Cheese from Hiland Dairy, and comes together in just a few minutes using a blender. No stove, no baking, no fuss.
1 cup Hiland Dairy Cottage Cheese
1 Ripe Banana
1 Tablespoon Honey
1 teaspoon Pure Vanilla Extract
1–2 Tablespoons Vanilla Instant Pudding Mix
Banana Slices
Nilla Wafers
In a blender or food processor, add the 1 cup Hiland Cottage Cheese, 1 ripe banana, 1 Tablespoon honey, 1 teaspoon vanilla extract, 1-2 Tablespoons Vanilla Pudding Mix. Blend until smooth, thickened and super creamy.
Time to serve! I like to place some Nilla wafers and banana slices to the bottom of the serving dish then top with the creamy banana pudding mixture and top with more banana slices and Nilla wafer crumbles.
Keep the remaining pudding in an airtight container in the fridge for up to a few days.
