The Best Chocolate for Dipping Ice Cream Sandwiches

When it comes to dipping ice cream sandwiches, not all chocolate is created equal. The goal is to get that smooth, glossy coating that hardens quickly and doesn’t slide right off the melty ice cream. There are a few different options.

  • Melting wafers (like Wilton or Ghirardelli) are my personal favorite. They’re made specifically for coating and candy-making, which means they melt smoothly and harden with that perfect snappy finish. No need to temper, no need to add oil, just melt and dip. 

  • Chocolate chips are super convenient because most of us already have a bag in the pantry. They’ll work, but they’re not designed for dipping, so they tend to be a little thicker when melted. If you go this route, stir in about 1 teaspoon of coconut oil or vegetable oil per cup of chips to help thin it out and make it smoother for dipping.

  • Baking chocolate bars (like Ghirardelli or Baker’s) can also work well and give a richer chocolate flavor. Just make sure to chop them finely so they melt evenly, and keep an eye on the texture. If it starts to thicken too quickly, a little oil can help here too.

Step By Step Instructions

Melt the chocolate: Add your melting chocolate or chocolate chips to a microwave-safe bowl. Heat in 30-second intervals, stirring well after each round, until the chocolate is smooth and completely melted. If you’re using chocolate chips, you can stir in a small amount of coconut oil or vegetable oil to help it melt more evenly.

Prepare your workstation: Line a baking sheet or large tray with parchment paper so the dipped ice cream pops don’t stick. Have your toppings ready to go in small bowls nearby, and set out your popsicle or lollipop sticks.

Cut and insert sticks: Working quickly so they don’t melt, unwrap the ice cream sandwiches and cut each one in half. The cookie layer cracked when I added the stick, can I still use it?

Instructions
