Instructions

Place the cookies bottom side up. Using an ice cream scoop or large spoon, scoop ice cream onto one of the bottoms of the cookies.
Take the other cookie and place the bottom side on top of the ice cream scoop. Press down slightly firm to sandwich ice cream.
Place sprinkles or topping of choice in a shallow dish. Take cookie and roll the ice cream side through the topping until all coated.
Place on a cookie sheet and place back in the freezer to set.
