Look no further for a delicious and simple recipe for Key Lime Pie Bars. My mom makes this Key Lime Pie every year and everyone raves over it. Simple ingredients, fresh, light and creamy. Perfect for a summer treat. 

I decided to make her famous-to-us recipe for Key Lime Pie into a simple bar dessert. Easy to make and easy to cut and easy to serve. 

What is the difference between a Key Lime and a regular Lime?

Although they may seem to only have a size difference, Key Limes are actually a little more on the sweet side while regular limes are on the tart side. That’s why Key Limes make a perfect fruit for a sweet (and tiny bit tart) dessert. 

What are the ingredients for Key Lime Pie?

Key Lime Pie is made of only a few ingredients. The crust, oh man, the crust. Guess what, two ingredients. Graham Cracker Crumbs and my favorite Hiland Dairy Butter. Nothing better than the quality Hiland products for all my recipes. They make a difference, trust me. 

Then the filling. Three ingredients for this. Okay, 4 if you count the lime zest. You can juice a key lime yourself or just grab some bottled key lime juice. Make your life easy. 

I shouldn’t play favorites, but a homemade whipped topping is alway on top of my list. Homemade whipped cream is key to this recipe for Key Lime Pie so grab some Hiland Dairy Heavy Cream while you are at the store picking up ingredients.

Key Lime Pie Bars

Simple, fresh and delicious Key Lime Pie Bars with my favorite Hiland Dairy ingredients. The perfect treat for summer!

Ingredients

Crust:

5 Tablespoons Hiland Dairy Butter, melted

1 1/2 cups Graham Cracker Crumbs

Filling:

2 Egg Yolks

2 teaspoons Key Lime or regular lime zest

1/2 cup Key Lime Juice

1 can (14 oz.) sweetened condensed milk

Whipped Topping

1 cup Hiland Dairy Heavy Cream

1/4 cup granulated sugar

1/2 teaspoon pure vanilla extract

Instructions

1. Preheat oven to 350 degrees. In an 8×8 baking dish, prep with nonstick spray or parchment paper and set aside.

2. In a small bowl, mix the melted Hiland Dairy Butter with the graham cracker crumbs. Mix together until combined. Mixture will look like wet sand.

3. Pour the crumb mixture into the baking dish and press down into an even layer. Bake the crust in the oven for 6-7 minutes.

4. Filling: In a stand mixer or with a handheld mixer, mix the egg yolks, sweetened condensed milk, Key Lime juice and lime zest. Mix on medium speed f0r 2-3 minutes until combined.

5. Pour the filling over the baked crust and spread out evenly. Place in the fridge overnight to set.

6. Whipped Topping: In a stand mixer with the whisk attachment or a handheld mixer, add the Hiland Dairy Heavy Cream, sugar and vanilla and mix on medium speed for about 2 minutes or until you have stiff peaks.

7. Once ready to serve, cut bars and place a large dollop of the whipped topping on each bar. Garnish with a slice of Key Lime and some zest if desired.

8. Store bars in the fridge when not serving. Enjoy!
