A soft, buttery cookie with pumpkin spice flavor packed with white chocolate chips. Perfect pumpkin flavor for a perfect fall cookie.
3 cups all-purpose flour
2 teaspoon pumpkin spice
1 teaspoon baking soda
1 teaspoon kosher salt
1 cup butter room temperature
1 cup brown sugar packed
½ cup granulated sugar
2 eggs, room temperature
2 teaspoon pure vanilla extract
2 cups white chocolate chips
1. Preheat the oven to 375 degrees. Prepare a baking sheet with parchment paper or nonstick spray.
2. In a medium bowl, whisk together the flour, baking soda, pumpkin spice and salt. Set aside.
3. In the bowl of a stand mixer or with a hand mixer, add the butter, white sugar and brown sugar. Mix on medium high speed for about 5 minutes. Add the vanilla and eggs and mix again until just combined.
4. Scrape the sides of the bowl. Then add the flour mixture a little bit at a time, mixing on low after each addition. Add the white chocolate chips and mix again on low until the chips are incorporated. Dough will be thick.
5. Using a large cookie scoop, scoop the dough and place on the baking sheet 2 inches apart. Bake at 375 degrees for 10-12 minutes or until the edges are just starting to turn golden.
6. Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes then transfer to a cooling rack.
