Zucchini and Sausage Stovetop Casserole is one of my favorite one pan meals to make. Tons of flavor, texture, but also a really easy recipe to make. 

What is Zucchini and Sausage Stovetop Casserole?

Zucchini and Sausage Stovetop Casserole is a combination of sausage, zucchini, tomatoes, onions, spices, and rice. All made in one pan right on the stovetop. All topped with lots of melty cheese. 

Why I Love this Zucchini and Sausage Stovetop Casserole?

This Stovetop Casserole is one of my favorite one pan meals to make because it’s so easy to throw together on a busy weeknight but still has tons of flavor. 

I also love this Zucchini and Sausage recipe because it’s a nice change from the usual chicken meals I’m always trying to make more exciting. Lots of protein and veggies plus tastes amazing. 

What are the Ingredients in this Stovetop Casserole?

The ingredients are pretty simple in this one pan stovetop casserole.

  • pork sausage (can use chicken sausage too)
  • zucchini
  • onion
  • tomatoes
  • ready to serve brown rice (cooked)
  • mustard, garlic, salt, pepper
  • shredded cheddar cheese

How to Make Zucchini and Sausage Skillet?

Making this stovetop casserole is really easy. Basically just cook the sausage first, then add the sliced zucchini and onions. After those are all cooked and soft, add all the other ingredients and cook all together until the flavors are all combined. 

Before serving, sprinkle the cheddar cheese over top and let melt. Pretty darn easy one pan meal. 

What About the Rice?

For this stovetop casserole recipe, I have always used a package of the Ready to Serve Brown Rice. It works really well because it’s already cooked so there’s no extra waiting. 

You could also use a package of steam rice that you just cook in the microwave before you add it to the zucchini and sausage skillet. 

What Are Ways to Change Up This Stovetop Casserole?

The best thing about this stovetop casserole recipe is that you can change up the protein or veggies to use what you have on hand or make it exactly what you like. Here are some variations that would be delicious in this one pan meal.

  • Switch up the veggie: squash, potatoes, eggplant, peppers
  • Switch up the Protein: ground beef, ground chicken, cut sausage, cut chicken, cut steak
  • Spices: Add oregano and basil for Italian flavors, cumin, paprika for Mexican
  • Different Cheese: Try mozzarella, pepperjack, monterey, parmesan

Zucchini and Sausage Stovetop Casserole

Sausage, Zucchini, Onions, Tomatoes, and Rice all cooked together in a one pan meal to make a comfort meal topped with melty cheese that your family will love.

Ingredients

1 lb pork sausage

1 Tablespoon vegetable or canola oil

3 medium zucchini, thinly sliced 1 medium onion, chopped

1 can (14.5 ounce) stewed tomatoes, slightly cut up

1 package (8.8 ounces) Ready to Serve brown rice

1 teaspoon mustard

1/2 teaspoon garlic powder

1/2 teaspoon kosher salt

1/4 teaspoon pepper

1 cup shredded cheddar cheese

Instructions

1. In a large skillet, cook the sausage over medium heat until cooked through and no longer pink. Break into crumbles. Drain any excess grease.

2. Push cooked sausage to the side of the pan. In that same pan, add oil and heat on medium. Add zucchini and onion, cook and stir for about 5-7 minutes. Mix sausage into the zucchini and onions. Then add tomatoes, rice, mustard, garlic, salt and pepper. Bring to a boil, reduce heat. Cover and simmer for about 5 minutes.

3. Remove from heat, sprinkle with shredded cheese and let stand until cheese gets nice and melty. Serve!
