I gave the spotlight to vanilla cupcakes previously, so now it’s time for the chocolate sibling to shine. Unlike the vanilla cupcake, I have a few different chocolate cupcake versions I like. I’m sharing this one first because it’s semi-homemade and I just can’t resist an easy cupcake that tastes amazing. This is basically taking a box mix and turning up the volume. Everything in one bowl and mix. Paired with the milk chocolate frosting and you have yourself a treat. Add a glass of milk and I would dare say a meal. 

These are rich, moist ( I hate that word, but I still haven’t found anything that describes cake better) and super duper chocolately. I love making these because it calls for ingredients I normally have around my house and I can throw them together in about 15 minutes. Don’t be weirded out by the coffee or the sour cream in there, coffee brings out the chocolate flavor and the sour cream gives the cake moisture, perfect secret ingredients.

Chocolate Cupcakes

Ingredients

 1 box devils food cake mix
1 box (3.9 oz) chocolate fudge instant pudding mix
4 eggs
3/4 cup vegetable oil
3/4 cup hot water
1 cup sour cream (full fat)
1 1/2 cups chocolate chips/chunks
Milk Chocolate Frosting
1 cup unsalted butter, softened to room temperature
3 and 1/2 cups powdered sugar (to taste)
1/2 cup unsweetened cocoa powder
1/2 teaspoon salt
2 teaspoons pure vanilla extract
2 tablespoons heavy cream or milk

Instructions

1. Preheat the oven to 325 degrees. Set aside a cupcake tin with liners.
2. In a mixer bowl, pour in the box cake mix and pudding mix. Then add the eggs, oil and hot water, mix together until combined. Add the sour cream and mix again. Batter will be very thick.
3. Add the chocolate chunks and fold in with a spatula until well combined
4. Fill the cupcake liners about 1/2 full. Bake for 20-22 minutes or until a toothpick comes out clean. Mine are usually done closer to the 20 minute mark.
5. Set aside on a wire rack to cool before frosting.
Frosting Directions
1. Cream the butter in a mixer for about 2 minutes on high.
2. Add the powdered sugar 1 cup at a time, leaving aside 1/2 cup. Mix on low after each added cup. Add the cocoa powder and salt next, mix well again.
3. Add the cream or milk and vanilla, mix well again. Add the last 1/2 cup of powdered sugar if you would like the frosting a little thicker. Done!
