I originally went searching for dessert ideas that had something to do with Moose or ducks because Dave’s cousin was having a baby shower and the theme was Duck, Duck, Moose. (How cute is that?) Not a lot of moose dessert ideas out there.

However, I found a bunch for Moose Munch which has now become my new snacking obsession. Sweet and salty, crunchy and smooth. All the perfect combinations. Made up of caramel popcorn, dry roasted salted peanuts, mini marshmallows and a milk chocolate drizzle.

I made my own caramel corn, but you could definitely just buy caramel corn and add the rest. This was a really big hit at the shower and I had several people ask for the recipe. Warning though, it’s addicting!

Ingredients

Caramel Corn Ingredients
12 cups popped popcorn
1/2 cup (1 stick) butter
3/4 cup brown sugar
1/2 teaspoon salt
1/4 cup Karo Syrup
1 teaspoon baking soda
Moose Munch Ingredients
Caramel Corn (recipe above)
1/2 bag mini marshmallows
1 bag milk chocolate chips
1/2 cup dry roasted or honey roasted peanuts
2 Tablespoons vegetable oil

Instructions

Caramel Corn Directions
1. Put popped popcorn in a paper bag, set aside. Place stick of butter, brown sugar, salt and corn syrup into microwave safe bowl.
2. Place in microwave and heat until it bubbles. Times will vary by microwave so you will want to watch it closely. Once melted and bubbly, remove from the microwave and stir.
3. Return to microwave and cook for 1 minute. Remove again, add baking soda and stir well. Mixture will thicken and lighten in color. Pour mixture over the popcorn inside the paper bag.
4. Fold the top of the paper bag down several times to close- then shake really well to distribute all of the caramel over the popcorn.
5. Place entire bag of popcorn back into the microwave and heat for another 1 minute. Remove and shake some more.
