Salmon with Spinach Cream Sauce

Easy and quick meal, not much prep time and not much cook time. My kind of weeknight.

Ingredients

Salmon filets
olive oil
2 Tablespoons butter
1 cup heavy cream
1 teaspoon minced garlic
1/2 teaspoon thyme (optional)
2 cups spinach

Instructions

1. In a pan over medium heat, heat 1 Tablespoon olive oil. Once hot, lay the salmon filets into the pan. Sprinkle the tops of salmon with salt and pepper.
2. Cook for about 3 minutes on the one side, then flip to other side and cook again for about 3 minutes until fully cooked.
3. Once cooked, turn heat to low/medium. Add 2 Tablespoons butter and 1 teaspoon garlic and 1/2 teaspoon thyme into the pan. Once melted, add 1 cup heavy cream. cook and stir occasionally until sauce gets thick. About 3-4 minutes. Once thick, add the spinach and cook down.
4. Serve salmon and spoon sauce over the salmon, enjoy!
