Ingredients

1/2 cup (1 stick) butter, melted and slightly cooled

1 cup packed brown sugar

2 large eggs, beaten

1 1/2 teaspoons pure vanilla extract

45 ripe bananas, mashed

1 3/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon kosher salt

1/2 cup chopped pecans (optional)

Instructions

  1. Preheat oven to 350 degrees. Spray a loaf pan with nonstick baking spray then line with parchment paper. Makes for easy removal of the bread.
  2. In a stand mixer, beat together the butter, brown sugar, eggs and vanilla until well blended. Add the bananas and mix again until combined.
  3. In a separate medium bowl, whisk together the flour, baking soda and salt. Add the dry ingredients into the wet ingredients and beat on low until just combined. Add the pecans (if using) and mix again until combined.
  4. Pour batter into the loaf pan and spread out evenly. Sprinkle the sugar over the top of the batter.
  5. Bake for 45-55 minutes or until a toothpick in the center comes out with no batter. Remove from the oven and let cool. Slice and serve with butter.
