Well, here they finally are. These amazing pieces of peanut butter chocolate heaven. I had a lot of people message me about these after I shared about them on Instagram stories. Nothing like a little peanut butter and chocolate to bring everyone together. It’s universally loved, you just can’t deny it.

These are also not hard to make which is a major bonus. Especially when you are craving peanut butter and chocolate and need a quick fix. These are obviously ridiculously amazing right out of the oven. That melty peanut butter filling is beyond words. These are also really good once the pb has cooled off, but if you want that melty filling again then just pop in the microwave for a few seconds. back to melty goodness.

Peanut Butter Filled Chocolate Cookies

Ingredients

Peanut Butter Filling
3/4 cup creamy peanut butter
3/4 cup powdered sugar
Cookies
1/2 cup butter, room temperature
1/4 cup creamy peanut butter
1 cup light brown sugar
1 teaspoon pure vanilla extract
1 egg + 1 egg yolk
1/2 cup cocoa powder
1/2 teaspoon kosher salt
1/2 teaspoon baking soda
1 1/2 cups flour
1/4 cup granulated sugar

Instructions

1. Preheat the oven to 350 degrees.
Peanut Butter Filling
1. In the bowl of your stand mixer, mix the peanut butter and powdered sugar together until smooth. Roll the filling into 1- inch balls. Makes about 24 balls. (mixture will be sticky). Place them on baking sheet lined with parchment or Silpat and chill in the freezer while you are making your cookie dough.
Cookies
1. Now in the mixer, mix the butter, peanut butter and brown sugar together for 2 minutes on medium speed until light and creamy. Scrape the sides of the bowl as necessary.
2. Add in the vanilla, egg and extra yolk, cocoa powder, salt, and baking soda. Mix on medium speed for one minute until smooth, scraping the sides of the bowl as necessary. Add the flour and mix on low speed until just combined.
3. Remove the peanut butter balls from the freezer. Scoop out a heaping tablespoon sized amount of the chocolate dough and form the dough around a peanut butter ball. Flatten the dough slightly so it’s not a round ball.
4. Dip each into the granulated sugar and place on baking sheet 2 inches apart. Bake for 8-9 minutes until cookies are set and slightly cracked. Transfer to a wire rack to cool completely.
