If you are looking for something simple, then you’ve come to the right place. These cookies are SO simple! A box cake mix is one of the ingredients so you know it’s easy. I love a soft cookie so these are right up my alley. Hard edges, get outta here. These live up to their names as ooey gooey.

Gooey Butter Chocolate Cookies

Ingredients

1 (8-ounce) block cream cheese, room temperature

1 stick butter (1 stick), at room temperature

1 large egg

1 teaspoon pure vanilla extract

1 (18-ounce) box chocolate cake mix

powdered sugar

Instructions

  1. In a bowl of a stand mixer, beat the cream cheese and butter until smooth. Add in the egg and vanilla then mix again. Add the cake mix and mix again until just combined. Wrap dough in plastic wrap and refrigerate for at least 2 hours.
  2. Preheat oven to 350 degrees and prepare a baking sheet with silpat or non stick spray.
  3. Take the chilled dough from the fridge and roll Tablespoon size balls and then roll the balls in powdered sugar. Place on the cookie sheet about 2 inches apart. Bake 11 minutes. The cookies will still look soft and gooey. Cool completely and sprinkle with more powdered sugar.
