Drizzle olive oil over salmon filets, sprinkle with a generous pinch of salt and pepper.
Chop tomatoes and onion and place in small bowl. Drizzle 1 Tablespoon of olive oil over tomatoes and onions. Add thyme and oregano and a pinch of salt and pepper. Stir all together so everything is coated.
Place salmon filets oil side down into a foil square. Spoon tomato mixture over the salmon. Fold up foil and seal up tops so fish is enclosed.
