Cheeseburger Tater Tot Casserole

If this isn’t a solid midwest meal, I don’t know what is? And it’s so good!! A little beef, a little ketchup, a little mustard, a little relish…and of course tater tots. Oh, and cheese. Lots and lots of cheese.

Some midwest states call this a “hot dish” but I grew up just calling them casseroles. I think Nebraska mainly says casserole, tell me if I’m wrong. Hot dish is more a Minnesota thing? Either way, this one is ALL midwest and comforting. Perfect for an easy dinner that your family will love! Nothing fancy but all delicious.

Cheeseburger Tater Tot Casserole

Ingredients

1 pound ground beef

1/3 cup diced sweet onion

2/3 cup ketchup

2 Tablespoons yellow mustard

2 Tablespoons dill pickle relish

2 Tablespoons butter

2 Tablespoons all-purpose flour

1 1/2 cups milk

1/4 teaspoon kosher salt

1/4 teaspoon ground black pepper

2 cups Cheddar Shredded Cheese, divided for insude and on top

32 ounce bag Tater Tots

Instructions

  1. Preheat oven to 350 degrees. Spray a casserole dish with non stick spray.
  2. In a large skillet over medium heat, cook ground beef and onion until beef is brown; drain.
  3. Stir in ketchup, mustard and relish. Add salt and pepper to taste. Spoon mixture into casserole dish and smooth into an even layer.
  4. In a saucepan over medium heat, melt butter completely. Slowly whisk in the flour until smooth. Keep whisking for another minute or 2.
  5. Slowly whisk in the milk, stirring until fully combined. Keep whisking until the sauce is thick and bubbling; about 5 minutes. Add in salt and pepper.
  6. Remove from heat and stir in 1 1/2 cups of cheese until it is completely melted and smooth.
  7. Evenly pour the sauce over the meat mixture. Arrange the frozen tater tots on top in an even layer over the cheese sauce.
  8. Bake for 35 minutes. Remove from oven and sprinkle remaining cheese over the tots. Return to the oven for an additional 5 minutes, or until the cheese is melted.

    1. So happy to hear that! You could make the base casserole a day or so ahead, refrigerate and then add the tater tots on tot right before baking.
