My friend Kristan messaged me and asked if I had a coconut popsicle recipe because her son loves coconut but is not a fan of the flakes of coconut. So she was searching for a smooth and creamy coconut popsicle that Jack would love. Thank you Jack for the inspiration, because I’m totally in love with these super smooth and creamy coconut popsicles.

These are extremely easy to make and full of yummy coconut flavor. It feels like a tropical treat in the middle fo your backyard. I really could have used these when I was pregnant with Leah, I craved fruit. But not just regular fruit, tropical fruit. Actually, I craved a pina colada or a Lava Flow. But since the real stuff wasn’t happening, I turned to tropical popsicles to fill the need. These would have been perfect!

Speaking of Lava Flow drinks, I added some strawberry puree to a few of the coconut popsicles and it tastes amazing! Highly recommend,

If you are a tropical drink fan and don’t want any of the coconut flakes like Jack, then you should definitely try these! So easy!

Coconut Popsicles

Creamy and yummy coconut popsicles! Perfect for bringing the feel of the beach right to your backyard! Add some strawberry puree for a sweet addition.

Ingredients

1 cup heavy cream

1 can (14 ounce) of sweetened condensed milk

1 can (14.5 ounces) coconut cream, full fat (the can version, not the box or refrigerated milk)

1/2 pound strawberries, pureed (optional)

Instructions

  1. In a large bowl, add the heavy cream, condensed milk and coconut milk. Stir until combined.
  2. If using strawberry puree, blend strawberries until desired consistency and set aside.
  3. Using the funnel, spoon coconut mixture into the popsicle molds filling just shy of full. Place stick in mold and place in the freezer for at least 4 hours until frozen. Overnight is even better.
  4. If using strawberry puree, layer strawberry mix and coconut mix one on top of each other in the poppsicle mold. Place stick inside mold and stor slightly to mix the two together. Place sticks in the mold and freeze.
  5. These are creamier popsicles, so be sure to take time to warm the outside of the mold so the popsicles slides out nicely. Enjoy!!
