I am completely in love with these crispy potatoes. They have tons of flavor with a bit of garlic and they have the perfect crispy edges with the soft center. An easy and great option for a comfort side dish.

These are super easy to make, literally slice and season then put on the baking sheet and bake. Easy peasy. Make a lot or a little. Feed your crew or feed yourself. Love!

Oven Baked Crispy Garlic Potatoes

Sliced potatoes baked to perfection for a crispy edge and a soft middle. Easy to make, perfect and delicious side dish.

Ingredients

3 pounds Yukon Gold potatoes, peeled

6 Tablespoons butter, melted

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon pepper

1 cup chicken broth

2 Tablespoons minced garlic

Instructions

  1. Preheat the oven to 425 degrees. Spray a large baking sheet/jelly roll pan with rimmed edges with nonstick spray.
  2. In a medium sized bowl, add the melted butter, thyme, salt and pepper and combine.
  3. Cut peeled potatoes into slices about 1 inch thick. Toss potatoes in the butter mixture then arrange in a layer on the baking sheet.
  4. Roast potatoes in the oven for 15 minutes. Remove from oven and flip potatoes then roast for another 15 minutes.
  5. Remove from the oven, flip potatoes again then pour the chicken broth and garlic into the pan. Roast again for 10 minutes. Remove from oven, cool slightly and enjoy!
