If you are looking for an incredibly rich, cheesy and addicting dip, then look no more. This one is all the things you want in a dip. Buttery, cheesy, creamy ingredients all from Hiland Dairy, my absolute FAVORITE brand to use for recipes. It feels like it’s from a restaurant but it’s easy and you made it in about 20 minutes in your kitchen. Rich and creamy cheesy dip then topped with that gooey but crusty cheese broiled in the oven. Add some toasted baguette slices and you have yourself the comfort of all comfort appetizers. Or make it a meal, no one is judging!

Super easy to make in one pan, then broil in the oven for a super cheesy finish. You will be the hit of your friends. Or just yourself, on the couch, again, no judging. Get ready to be asked for the recipe too. Might I also recommend spooning a little up for yourself before you serve it just to make sure you get some for yourself.

Shrimp Scampi Dip

2 Tablespoons Hiland Dairy Butter

8 ounces, raw shrimp, peeled, deveined and chopped

1 heaping Tablespoon of minced garlic

1/2 teaspoon red pepper flakes

1/4 cup white wine or chicken broth

2 Tablespoons fresh lemon juice

pinch of salt and pepper

4 ounces Hiland Dairy cream cheese

1/4 cup Hiland Dairy Sour Cream

2 Tablespoons mayonnaise

2 Tablespoons chopped parsley

1/2 cup shredded mozzarella, divided

2 Tablespoons shredded Parmesan

Ingredients

  1. Preheat the oven to 350 degrees and then spray a 9 inch baking dish with non stick spray. Set aside.
  2. In a large skillet, melt butter on medium high heat. Once melted, add the minced garlic, red pepper flakes and chopped shrimp. Cook for about 2 minutes until shrimp is pink.
  3. Add the wine or chicken broth plus wine and a pinch of salt and pepper.
  4. Bring mixture to a simmer, then remove from heat and add cream cheese, sour cream, mayonnaise, parsley, 1/4 cup shredded mozzarella and 2 Tablespoons Parmesan.
  5. Once combined and melty, pour mixture into the prepared baking dish. Sprinkle the remaining 1/4 cup mozzarella cheese over the top. Bake for 10-12 minutes or until bubbly.
  6. Serve with toasted bread or crackers.
