One of my friends messaged me about trying a protein bar recipe. I’d also like to acknowledge that I’ve known this guy since we were in junior high. So I’d like to say thank you to Jason for continuing to be my friend even after my yellow jeans phase, crazy bangs and all the unfortunate fashion choices I made.

I have never attempted a protein bar recipe before, but I gotta say, I think I nailed it. This tastes like a candy bar. So if you have a protein powder you love, then you have to give this a try. My favorites currently are Performance which I get at Hy Vee and Rock Solid Nutrition. Super easy, no baking. The only downside I see is they need to be refrigerated or frozen otherwise they get a bit melty. Which really isn’t a big downside when you can eat a healthy candy bar.

Homemade Protein Bars

Easy to make, healthy ingredients to make a delicious on-the-go delicious treat for your family!

Ingredients

3/4 cup peanut butter (or any nut butter you have)
2 tablespoons coconut oil
4 tablespoons honey
2 teaspoons pure vanilla extract
1/4 teaspoon salt
2/3 cup chocolate protein powder (or any flavor)
3 tablespoons unsweetened coconut flakes
3 tablespoons miniature chocolate chips

Instructions

1. Line a loaf pan with parchment paper or foil. Make sure to leave an overhang with the parchment paper/foil and set aside.
2. In a large bowl, add the peanut butter, 2 tablespoons of the coconut oil, and honey. Microwave for 10-15 seconds and then stir until smooth and combined.
3. Add in the vanilla extract, salt, protein powder, coconut flakes, and chocolate chips. Stir until everything is combined and you have a thick dough. Press that dough into the prepared bread pan. Cover the bars and chill for one hour in the fridge.
4. Remove from the fridge and using the overhang, pull the bars from the bread pan. Cut into desired bar size. Store in fridge or freezer.
