I’ve been really into shortbread lately. It’s the easiest dessert to make. So why not make an easy and delicious dessert even better. Caramel Chocolate Shortbread Bars. Also, the most literal name for a dessert because there is no cute name to describe these.
One layer of shortbread, one layer creamy caramel and one layer milk chocolate sprinkled with sea salt. It’s the best of all the good stuff in life and it’s EASY! Leah helped me make these and she cheered for me when I poured in the flour. I love this girl.
The shortbread layer of the Caramel Chocolate Shortbread Bars is probably the hardest of the three layers. Get ready, it’s 4 ingredients. Whoa. Butter, sugar, salt and flour are all you need to make an incredible shortbread. You press the dough into a pan and bake. You have the first layer of the Caramel Chocolate Shortbread Bars.
The caramel layer of the Caramel Chocolate Shortbread Bars is done on the stove. Also just 4 ingredients. Butter, brown sugar, condensed milk and corn syrup. Simmer for about 4 minutes and done. Once the shortbread is cooled slightly, pour your caramel all over. You have completed the caramel layer of the Caramel Chocolate Shortbread Bars.
What would a Caramel Chocolate Shortbread Bar be without the Chocolate layer. So, go ahead and pour some chocolate chips into a microwave safe bowl and heat for 30 seconds at a time until the chocolate is nice and smooth. Pour the chocolate right on over the caramel layer, spread out evenly. After that, sprinkle (generously) some sea salt all over the top while the chocolate is still a bit melty.
Now, let it sit and cool and set up. Okay, I lied. Letting it cool completely might be the hardest part.

11 Tablespoons Butter, room temperature
1/4 cup sugar
1/4 teaspoon salt
1 1/4 cup flour
Caramel Layer
1/2 cup Butter
1/2 cup brown sugar
1/2 cup condensed milk
2 Tablespoons corn syrup
Chocolate Layer
2 Cups Milk Chocolate Chips
Sea Salt for topping

Just finished making this. Cooling at the moment. I used semi sweet morsels and they didn’t melt very good. Had to spoon it on top and spread it out. Can not wait to taste it.

You can! Just keep them tightly covered until you are ready to serve. I wouldn’t go longer than 3 days.
