I’m pretty sure I have more days than not that I crave cookie dough. Not actual cookies, just the dough. I make a whole batch for just a couple spoonfuls of dough. Okay, more than a couple. Then I make the cookies and send them to work with Dave. Most of the time I choose chocolate chip because chocolate chip cookie dough is amazing and if you don’t agree then something might be wrong with you. Sorry, not sorry. But this random weeknight, I chose M&M cookies because they are Dave’s favorite and I figure he deserves some cookie dough too. Also hoping it will bribe him to put the tv up in the office, but I’m not holding my breath on that one. 

Plus, it gave me a chance to try out a new ingredient. I keep seeing cookie recipes that use pudding mix in the dough and it’s supposed to make the cookies super soft. Well, I tried it out. Holy moly, it worked! These are perfect and super soft and I love them so much. I have no idea the rhyme or reason behind it, but it’s amazing. I love a soft cookie and these verge on being soft enough where you wonder if it’s even cooked all the way through. (it is, don’t worry) Squishy and sweet and packed with M&Ms. 

These went to work with Dave, of course, and apparently they were gone by 10am which I’ll take as a good sign. Have you ever used pudding mix in your cookie recipes? What do you think, will you give it a try?

M&M Cookies

I love a soft cookie and these verge on being soft enough where you wonder if it’s even cooked all the way through. (it is, don’t worry) Squishy and sweet and packed with M&Ms.

Ingredients

3/4 cup butter (1 1/2 sticks), room temperature
1 cup brown sugar
1 egg
1 teaspoon vanilla
1 small box Instant Vanilla Pudding Mix (3.4 oz)
3/4 teaspoon baking soda
1 teaspoon salt
2 cups all-purpose flour
1 1/2 cups mini M&Ms, plus more for garnish

Instructions

1. Preheat oven to 350 degrees. In a mixer, beat the butter and brown sugar together on medium-high speed for about 2 minutes.
2. Add in the egg and vanilla, continue beating on medium-high speed until combined. Scrape down the sides of the bowl. Mix in the vanilla pudding, baking soda and salt. Mix until combined again.
3. Add in the flour one cup at a time, mixing after each cup. Mixture will be thick. Add in the M&Ms and beat on low or stir by hand.
4. On a baking sheet lined with a Silpat or parchment paper and using a large cookie scoop, scoop dough onto the sheet. Slightly flatten the balls of dough.
5. Add M&Ms to the top of the dough to garnish prior to baking. This adds extra candy, but also makes them look super pretty. Bake for 8-10 minutes. Remove baking sheet and cool.
