Oh boy. These cookie butter bars. They are so good, so rich and chewy and bonus- easy to make. I am new to the cookie butter world. I had it for the first time only a few years ago. How did I wait so long? Cookie Butter is delicious and, like peanut butter and Nutella, I will eat it by the spoonful.

I grabbed the Speculooos Cookie Butter from Trader Joe’s the other week and since I am in full Fall baking mode, I needed to make some kind of dessert with this cookie butter. Cookies? Bars? Cake? What to make?

To the polls! I did a poll on Instagram and the people have spoken- Cookie Butter Bars it is! These bars are so full of that cinnamon, brown sugar Fall flavors that I adore! Cookie Butter Bars are soft, moist (ew) and then have this crunch from the cookies on top. I have fallen in love with these bars plus they are so incredibly easy. No mixer needed.

Cookie Butter Bars

Soft and chewy Cookie Butter Bars with tons of flavor and made with actual cookie butter and cookie topping.

Ingredients

1/2 cup butter, melted

1/2 cup cookie butter

1 cup brown sugar

1 egg

2 teaspoons pure vanilla extract

1 1/2 cups all-purpose flour

1/2 teaspoon cinnamon

1/4 teaspoon salt

68 cinnamon flavored cookies, broken into pieces (I used cinnamon Scooby Snacks 🙂 but you can use any cinnamon cookie)

Instructions

  1. Preheat your oven to 350 degrees and line an 8×8 baking pan with parchment paper or spray well with non stick spray.
  2. In a large bowl, mix the melted butter, cookie butter and brown sugar until combined.
  3. Add the eggs and vanilla and mix again until smooth. Add in the flour, cinnamon and salt. Mix again until combined, dough will be slightly thick.
  4. Press the dough into the baking pan so it’s evenly spread. Break up and crumble the cinnamon cookies over the top and press down into the dough slightly.
  5. Bake for 25-30 minutes. Leave them in the pan to cool for at least 40-60 minutes so the bars set up. They will be too soft and gooey if you try to cut them immediately.
  6. Once cooled completely, cut into bars and enjoy!
