I am always brainstorming new and different ways to cook salmon so it’s not the same old thing. Plus, Dave never jumps for joy when we have salmon for dinner so I try to up the game.
My favorite way to make salmon feel special is to coat it or give it a nice crust. Great things to coat it with are sour cream, may0, or greek yogurt with lots of spices. But for this one, I went with straight butter. So good! I added parmesan cheese and breadcrumbs to give it a crunchy outer layer. I mean, cheese is never a bad idea, right?

A simple way to prepare salmon that is delicious with a great crunchy outer layer. Plus cheese is always a good idea, right?
4 Salmon fillets
2/3 cup breadcrumbs
2/3 cup grated parmesan cheese
1/4 cup chopped parsley
4 teaspoons minced garlic
5 Tablespoons butter, melted
salt and pepper to taste
Lemon wedges
1. Preheat oven to 400 degrees. Line a baking sheet with foil.
2. Place the salmon skin side down on the foil. Set aside.
3. In a small bowl, mix together the breadcrumbs, parmesan, parsley, garlic and melted butter. Add a pinch of salt and pepper.
4. Mix together. until the butter is coated over the breadcrumbs. Use your hands if needed, it’s easier.
5. Pour the mixture over the salmon and press down so the tops of the salmon are totally covered. Bake uncovered for 12-15 minutes until the top gets golden brown.
6. Squeeze a bit of lemon juice over the top then serve with rice, veggies, over a salad. So many options!
