I am a big fan of a Crockpot meal. Add everything in and let the Crockpot do its magic.
This easy Crockpot Lemon Chicken and Rice is filled with flavor and a great, well rounded dinner. The lemon flavor is subtle, the chicken is moist and the rice is perfectly fluffy.
Simple ingredients for this recipe. Mostly Chicken, rice, broth, and a lot of spices.
I love to use Chicken Thighs for this recipe. However, I like to use Chicken Thighs for most recipes. I find thighs have more flavor and keep moist way easier. However, Chicken Breasts will work great in this Crockpot Lemon Chicken recipe.
Rice can be high maintenance sometimes, but when it’s good, it’s good. For this Crockpot Lemon Chicken and Rice, I highly recommend using a Long Grain Brown Rice. It works best in the Crockpot and handles a longer cook time.
You can also use a long grain white rice, but I would reduce the cooking time. Check on it after an hour or so. Definitely avoid a short grain rice as well as minute rice otherwise you’ll end up with a mushy crockpot rice dinner.
I am always here for a cooking shortcut…if the results are the same. With this Crockpot Lemon Chicken, I suggest going with a fresh lemon. The flavors are stronger and hold up better while cooking for a long time in the Crockpot. Also, the fresh lemon brings out the herb flavors so well.

You can always sear the chicken prior to starting the crockpot meal. Sear a few chicken thighs on a Sunday and then add everything to the crockpot when you are ready to start this recipe.
T0 reheat any leftovers in the crockpot- add a few Tablespoons of broth to the rice and place on low heat for 30 minutes or so
For a quicker reheat in the microwave- add a few Tablespoons to the rice and reheat everything together for 1 minute at a time at 50% power.

Easy recipe for Crockpot Lemon Chicken and Rice. Tart lemon flavor with a variety of herbs pair with moist chicken and fluffy rice. A classic and easy dinner.
3–4 chicken thighs or breasts
salt/pepper
olive oil
1 1/2 cups long grain brown rice
1/2 cup diced onion
2 Tablespoon minced garlic
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
zest from 1 lemon
juice from 1 lemon
3 cups low sodium chicken broth
1. Season the chicken thighs generously with salt and pepper. Drizzle olive oil in a skillet on high heat. Once hot, place chicken in skillet and sear for 2 minutes. Flip and sear the other side for another 2 minutes. Remove from heat and set aside.
2. In a crockpot, add the rest of the ingredients: rice, onion, garlic, oregano, basil, salt/pepper, lemon zest, lemon juice, chicken broth. Mix all together.
3. Place seared chicken on top of rice and liquid mixture. Cover and set on high for 2.5 hours.
4. Once done, fluff rice with a fork and serve! Add a veggie to the side and enjoy!
