Mini Banana Bread Nutella Muffins

Weekend breakfast just got a little more Nutella-ey. I could eat Nutella with a spoon, and I do. But Nutella in the middle of a mini banana chocolate chip super soft and warm muffin is just almost too good to be true.

BUT! It’s not and it only takes one bowl and a few ingredients you probably already have in your pantry. You don’t even need a mixer. So good!

Dave’s breakfast specialty is blueberry muffins (from a box, let’s not get too crazy) and they are delicious. Really delicious but these gems are giving them a major run for their money. It’s really not fair though because Nutella wins just for being Nutella.

Mini Banana Bread Nutella Muffins

Nutella in the middle of a mini banana chocolate chip super soft and warm muffin is just almost too good to be true.

Ingredients

1 cup sugar

1/2 cup butter (melted)

2 eggs

3 ripe bananas

1 Tablespoon lemon juice

2 cups flour

3 teaspoons baking powder

1/2 teaspoon kosher salt

Nutella

1 cup mini chocolate chips plus more for topping

Instructions

  1. Preheat oven to 350 degrees. Spray a mini muffin tin well with nonstick spray. Set aside.
  2. Melt butter and pour into a larger bowl. Add sugar and mix until combined. Add eggs and then stir until all combined.
  3. In a separate bowl, mash bananas well. Add the bananas to the sugar mixture and then mix again. Stir in lemon juice.
  4. Add flour, baking powder and salt. Mix again until just combined. Pour in chocolate chips and mix again. (Feel free to add more if you want)
  5. Spoon batter into the greased mini muffin pan about 1/3 full. Drop a dollop in the middle of the batter in each muffin cup. Then top with more batter so the muffin cup is about 3/4 full.
  6. Drop another small dollop of nutella on the top of the batter and sprinkle with more mini chocolate chips.
  7. Bake for about 15 minutes or until the sides are just turning golden brown. Remove and cool in pan, then pop out and place on cooling rack.
  8. Enjoy warm with a big glass of milk! If eating the next day, I suggest warming them up in the microwave for about 10 seconds. Yummm!
