Chicken, good old chicken. Sometimes can be the most boring and then other times it can be the best thing you’ve tasted. This oven fried chicken is one that will surprise you. You think it’s a simple little chicken baked in the oven, nothing crazy. But oh man, this chicken is so incredibly moist, full of flavor and gets that crispy layer on the outside that may be the best part. This recipe uses Bisquick and it basically makes me feel like a good southern Grandma making chicken this way.
This is my mom’s recipe for oven fried chicken and we have it at family get togethers often because it’s always a big hit, goes with so many different sides and super easy to make.
How to get that crispy skin?
The crispy skin of this oven fried chicken is by far my favorite part. The trick to getting that crispy skin in the oven is as simple as butter, pancake mix and high heat.
This combo gets you that perfect and delicious crispy skin with no pot of oil, only a sheet pan needed.
Does it have to be Bisquick?
Well, I’m undecided. I haven’t tried this oven fried chicken with any other brand but I feel like the Bisquick brand gives the perfect breading texture, is a tiny bit sweet but not overly and bakes under high heat really well.
If you try this with any other brand, please let me know what you think. In the meantime, I’m using Bisquick.

Oven Fried Chicken
Simple oven fried chicken is super moist, full of flavor and has that crispy outer layer that might be the best part. Best part is that it’s easy to make and goes with all kinds of sides.
Ingredients
6 Tablespoons butter, plus 1-2 more for brushing
3/4 cup Bisquick mix
1 1/2 teaspoon paprika
1 1/4 teaspoon kosher salt
1/4 teaspoon pepper
3 pounds chicken drumsticks or thighs (skin on of off per preference)
Instructions
1. Preheat oven to 400 degrees.
2. Melt butter in the microwave and then pour onto a 9×13 baking sheet.
3. In a large bowl, mix together the Bisquick, paprika, salt and pepper. Dip and coat each chicken thigh or drumstick into the Bisquick mix. Then place the chicken on the pan of melted butter.
4. Brush chicken with the melted butter from the pan or use more butter if needed. Bake for 30 minutes. Flip chicken, brush with more melted butter from the pan and bake another 15 minutes.
5. Remove from the oven, let cool slightly and serve with your favorite side.
