Pizza is a big-ticket item in our house. We eat it a lot. I’m pretty sure my husband could eat pizza every day and be perfectly happy. Now my daughter seems to be on this same path as well. The girl is tiny but she can eat A LOT of pizza.

I also love pizza, but I also love to cook and variety and quick recipe ideas. Enter french bread pizza. You get to make your own and add your toppings but no dough making involved and tastes amazing. Oh, also super easy. I mean, really easy.

Who Doesn’t Love Pizza?

One of my favorite pizzas (besides the obvious pepperoni) is barbecue chicken pizza. Sweet barbecue sauce with melty mozzarella and some tart red onion. Annnd maybe even more melty mozzarella. I love mozzarella.

You can either cook your own chicken breast and shred it or go the even easier route (which is what I did) and get a Rotisserie chicken from the store and shred the meat from that. Super easy and quick weeknight meal that your family will love!

BBQ Chicken French Bread Pizza

Sweet barbecue sauce with melty mozzarella and some tart red onion.

Ingredients

  • 1 loaf French bread (cut in half lengthwise)
  • 2 cups BBQ sauce
  • 4 cups shredded Mozzarella cheese
  • 3 boneless skinless chicken breasts (cooked and shredded) (can use rotisserie chicken as well)
  • 1 red onion (thinly sliced)

Instructions

  1. Preheat oven to 350 degrees. Cut loaf of French bread lengthwise and place on a large baking sheet.
  2. Spread 1/2 cup barbecue sauce on top of each half of the bread. Sprinkle 2 cups of Mozzarella cheese on each half of the bread.
  3. In a small bowl, combine 1 cup of barbecue sauce and shredded chicken. Mix until chicken is coated in sauce.
  4. Spread chicken over each half of the bread. Sprinkle more mozarella cheese over top. Top with red onion as desired.
  5. Cook for 10 minutes, or until cheese is melted. Cut into slices and serve.
