My favorite meals are the ones that require minimal ingredients, minimal dishes, minimal time and are delicious. This Sausage and Pepper Pasta checks all the boxes. 

 

I use chicken sausage for this recipe, but you can use regular sausage or other proteins if you like as well. Lots of colorful peppers and the onion which gives a ton of flavor. Mixed together in a simple tomato sauce and pasta. Plus the cheese, lots of melty cheese.

Cooking the Onions and Peppers

The best way to cook peppers and onions is on a medium high heat. The goal is to cook them to become soft, but I also like to get the edges a bit brown as well. Brings out some of the flavor that I love.

Easy Sauce

I used a simple jar of Spaghetti Sauce for this recipe, but you could use any tomato based sauce. We always have a jar of spaghetti sauce in the pantry so that made it easy. I also add an Italian Seasoning but if you don’t have one, just use a mix of onion, garlic and oregano. 

 

This Sausage and Pepper Pasta has become easily one of our favorites and we have it on high rotation in our house. It’s so simple, quick and delicious!

Sausage and Pepper Pasta

Simple, delicious, one pan Sausage and Pepper Pasta. Perfect for an easy weeknight meal.

Ingredients

1 box (16 oz) penne or ziti pasta

45 links of chicken or regular sausage, cut into ½ inch slices

2 tablespoons olive oil

1 red pepper, sliced

1 green pepper, sliced

1 yellow pepper, sliced

1 onion, sliced

1 Tablespoon minced Garlic

1 cup spaghetti or tomato sauce

2 Tablespoons Italian Seasoning

Salt and pepper

Parmesan, shredded

Instructions

 

  1. Cook pasta according to directions, drain and set aside.

  2. Cut sausage into 1/2 inch slices. Then cut the peppers, and onions into thin slices. Set aside.

  3. In a large skillet, pour the olive oil and heat on medium high heat. Place sausage pieces in the skillet and cook on one side for about 3 minutes, flip and cook another 2-3 minutes. Remove sausage and put into a separate dish.

  4. In the same skillet, place the pepper and onion slices. Cook and mix on medium high heat for about 5 minutes until soft and a bit browned. Add the minced garlic and stir together.

  5. Add the sausage back into the skillet and mix with the peppers and onions. Add the spaghetti sauce, Italian Seasoning plus a large pinch of salt and pepper. Mix together and simmer on low for one minutes.

  6. Add the cooked pasta to the pan and mix together. Top with parmesan cheese and serve.
