Summer is ending and that back to school feeling is fully here. I love this time of year with the fun and excitement of new classes, new backpacks, new things to learn. I’m also preparing myself for an incredibly hungry kid after school since she’s been used to a 24/7 snack summer.
I try to keep snacks simple, quick and yummy, of course. I love a mix of nutritious with some sweetness too. These Strawberry and Cream Cheese Roll Ups are right up my alley. They come together in just a few minutes, have whole grains, fruit, and protein and dairy from the best Hiland Dairy Cream Cheese. Plus, a little sweet mixed in.
This simple recipe requires just a few ingredients – most of which you probably already have in the house!
You can use any kind of bread you like, any kind you have will work. Also, you can use a tortilla if you want to change it up.
Cream Cheese is the most important part of this snack. Hiland Dairy cream cheese is smooth, soft with a mild but rich taste. You’ll add a bit of protein from the dairy in cream cheese plus it’s delicious. It also includes no artificial growth hormones and is rigorously tested for antibiotics, so you know you’re getting the best quality dairy. (P.S. Any kind of milk will work for this simple snack. Personally, I like to go all-in when I’m making a shake and I usually opt for whole milk (another opportunity to use Hiland Dairy!). But you could definitely make this with 1% or skim milk, or even a dairy-free alternative if that’s what you had on hand.
Just a little powdered sugar adds the perfect amount of sweetness with the cream cheese. It makes this filling taste like cheesecake and cheesecake with strawberries is always a win.
You’ll want the Cream Cheese to be room temperature so it’s easy to mix. I like to leave mine out on the counter for 30 minutes to an hour. In a small bowl, add the cream cheese, milk, powdered sugar and vanilla. Use a spatula or a whisk to mix all together until smooth.
Cut the greens off the strawberries and then slice and chop into small pieces. Set aside.
I like to cut the crust off the bread slices but you can leave the crust on as well, whatever your preference is. Use a rolling pin or a glass pint glass to roll the bread thin and flat. Continue with the remaining bread slices.
Spread the cream cheese mixture on the bread, place the strawberry slices on one side of the bread and then roll up starting on the strawberry side.

Switch out the bread with a tortilla. No need to roll anything out, just spread the cream cheese mixture on the tortilla, add the strawberries and then roll on up.
I love a cream cheese and strawberry combo, but any fruit would be delicious in this roll up snack. Try raspberries, blueberries, bananas, blackberries, choose your favorite!
You can take this simple snack up a level by bruising the roll ups with a little butter and either toasting them in the oven or a skillet for a bit. The outer layer gets crispy and the inside gets warm and melty. So good!

6–8 slices of bread
¼ cup (2 ounces) Hiland Dairy Cream Cheese (room temp)
2 Tablespoons Hiland Dairy Milk
2 Tablespoons powdered sugar
¼ teaspoon pure vanilla extract
Strawberries, cut into slices or pieces
In a small bowl, add the Hiland Dairy Cream Cheese, Milk, powdered sugar and vanilla. Use a spatula or whisk to mix all together until combined and smooth. Set aside.
Cut the crust off each slice of bread (you can leave them on too if preferred). Use a rolling pin or a large pint glass to roll the bread out flat and thin.
Spread the cream cheese mixture onto each piece of bread then add the strawberries to one side of the bread. Roll up the bread starting on the strawberry side.
Serve and enjoy!
