These easy Taco Roll Ups are everything you love about taco night, but wrapped up in golden, cheesy, pizza dough. They come together in under 30 minutes with just a few simple ingredients and are perfect for busy weeknights or when you need a quick and hearty snack or appetizer!
I’m always looking for ways to use anything taco flavored for dinner. I had some ground beef on hand and I already recently made Walking Taco Casserole, Taco Pasta, and a classic Midwest Taco Salad, so I wanted something a bit different. When I was rooting through my fridge I saw that I had a roll of pizza dough and then it hit me, why not roll everything up together! They’re like a mash-up between a soft taco and a cheesy pinwheel, and somehow even better than both!
All you need are a few basic ingredients: ground beef, taco seasoning, shredded cheese, and refrigerated pizza dough. That’s it! Just cook up the beef, roll everything up, slice into pinwheels, and bake until golden and melty. The best part is loading them up with toppings like sour cream, shredded lettuce, chopped tomatoes, a little guac if you’re feeling fancy. These are super versatile too, perfect for a quick dinner, snack, or as a party appetizer.
Only 4 Ingredients: All you need is ground beef, taco seasoning, shredded cheese, and pizza dough to make these golden, cheesy roll ups.
Totally Customizable: Swap the beef for ground turkey or beans, use your favorite shredded cheese, or mix in sautéed peppers or onions.
Perfect for Any Occasion: Serve them for a quick dinner, slice them smaller for a party appetizer, or pack a couple in a lunch box.
Quick to Make: From start to finish, they’re ready in under 30 minutes, making them perfect for busy weeknights.
Ground beef – This is the hearty, flavorful base of the roll ups and gives them that classic taco taste. Using 85/15 for the perfect balance of flavor and moisture.
Refrigerated pizza crust – Makes this recipe super easy and quick! It bakes up soft and golden while holding all the taco goodness inside.
Taco seasoning – Adds all the bold, zesty flavor with no extra effort. You can use a packet or your favorite homemade blend.
Water – Helps the taco seasoning mix into the beef evenly and creates a little sauce to keep things even.
Shredded Mexican blend cheese – Melts beautifully and gives that gooey, cheesy pull in every bite. Feel free to add extra.
Toppings (lettuce, tomato, sour cream, guacamole) – These bring freshness, crunch, and creamy contrast to the warm, savory roll ups. Let everyone build their own, it’s part of the fun!
Prepare for baking: Preheat the oven to 400°F and either spray a baking sheet with nonstick spray or line it with a silicone baking mat.
Cook the taco meat: In a medium skillet over medium-high heat, cook the ground beef until it’s fully browned and no longer pink, breaking it up as it cooks. Add the taco seasoning and water, then stir to combine until the meat is evenly coated and saucy. Reduce the heat to low to keep it warm.
Roll out the dough: Unroll the refrigerated pizza dough onto a clean surface and gently press it out into a large rectangle. Make sure the thickness is even so it bakes consistently and holds in all that delicious filling.
Assemble the roll ups: Spread the seasoned taco meat evenly over the surface of the dough, making sure to reach the edges. Sprinkle the shredded cheese evenly over the meat.
Roll and slice: Starting from the long side, carefully and tightly roll up the dough into a log. Don’t worry if it’s not perfect, just take your time. Use a serrated knife to slice the roll into 1-inch pieces and place them cut-side up on your prepared baking sheet.
Bake until golden: Bake for 10–12 minutes or until the tops are lightly golden and the cheese is melted. Remove from the oven and let them cool for a few minutes before serving.
Add toppings and serve: Top with shredded lettuce, diced tomatoes, sour cream, or guacamole, or let everyone add their own favorites. These are best served warm. Enjoy!
Let the pizza dough sit out for for a few minutes before unrolling so it’s easier to work with and won’t tear as easily when rolling.
Use parchment paper under the dough while assembling to make rolling and transferring to the baking sheet less messy.
Press the dough gently but evenly to avoid thin spots that might tear or let filling leak out.
Drain any excess grease from the beef after cooking so the roll ups don’t get soggy in the oven.
Roll slowly and gently to keep the spiral tight and prevent ingredients from spilling out the sides.
Use a serrated knife with a gentle sawing motion for cleaner slices without squishing the roll.
Space the roll ups out on the baking sheet so they can bake evenly and crisp up slightly on the edges.
Bake on the middle rack so the tops don’t brown too quickly before the dough is cooked through.

Use puff pastry instead of pizza dough for a flakier, buttery texture.
Swap the ground beef for ground turkey, chicken, or even chorizo for a different flavor.
Stir sautéed onions, bell peppers, or corn into the taco meat for extra texture and a veggie boost.
Add a spoonful of diced green chiles or jalapeños to the meat mixture to turn up the heat.
Mix in a spoonful of cream cheese or sour cream with the taco meat for a creamier filling.
Use a cheddar-jack blend or pepper jack cheese for a bolder cheesy flavor.
Brush the tops with garlic butter or taco-seasoned melted butter before baking for extra flavor and color.
Add black beans or refried beans to the filling for added fiber and a heartier roll up.
Store any leftover Taco Roll Ups in an airtight container in the refrigerator for up to 3 days. Let them cool completely before storing so they don’t get soggy. These don’t hold up well in the freezer as the dough tends to lose its texture once thawed, so it’s best to enjoy them fresh.
To reheat, place them on a baking sheet in a 325°F oven for about 10 minutes or until warmed through. You can also microwave them in 30-second bursts, but the oven will bring back the best texture.
What type of ground beef is best for this recipe?
An 85/15 blend works well because it has enough fat for flavor without making the roll ups greasy.
Can I use homemade pizza dough instead of store-bought?
Yes, homemade dough works great, just roll it out to a similar size and thickness so it bakes evenly.
Do I need to cook the ground beef before rolling it into the dough?
Yes, the beef must be fully cooked and seasoned before assembling so it’s safe to eat.
How do I keep the roll ups from falling apart when slicing?
Let the roll cool for a minute after rolling, then use a serrated knife and cut with a gentle sawing motion.
Can I prep these ahead of time and bake later?
Yes, assemble the roll ups and refrigerate for a few hours before baking, but don’t wait too long or the dough may get soggy.
Why is my dough tearing when I roll it up?
Cold dough can be stiff and prone to tearing, so let it sit at room temperature for 10–15 minutes before using.
