I love this soup. Love it. It’s pure comfort. It’s a cold day, cozy, curl up and enjoy this creamy soup kind of soup. It’s rich, creamy. It feels very midwestern to me and I love that. 

Bacon, rice, onion, cream and cheeeeese. Comfort. Add some crackers and more cheese on top and get to your cozy place.

Wild Rice Soup

Cozy and creamy wild rice soup is the perfect comfort food for those cold days. Or any day. Tons of flavor from the bacon, cream, onions and cheese.

Ingredients

1/2 medium onion, chopped (about 1/2 cup)

9 pieces of bacon, cut into large pieces (not cooked)

1 cup cooked Wild Rice

4 cups half and half (add more if you want your soup a little thinner)

2 cans cream of potato soup

12 ounces Velveeta, cut into cubes

Instructions

  1. In a large pot, cook the 1/2 cup chopped onion and bacon pieces on medium-high heat until bacon is cooked and onion is soft.
  2. Add cooked rice to the pot and stir together with the bacon and onions.
  3. Add the 4 cups half and half, 2 cans potato soup and 12 oz velveeta cubes to the pot.
  4. Move heat to low heat and continue to stir occasionally until soup becomes thicker.
  5. If soup becomes too thick, add more half and half to thin it out.
  6. Serve the soup warm with crackers and bread.

Notes

To reheat soup, place on low heat, add a bit of half and half and warm.
