I love this soup. Love it. It’s pure comfort. It’s a cold day, cozy, curl up and enjoy this creamy soup kind of soup. It’s rich, creamy. It feels very midwestern to me and I love that. 

Bacon, rice, onion, cream and cheeeeese. Comfort. Add some crackers and more cheese on top and get to your cozy place.

Wild Rice Soup

Cozy and creamy wild rice soup is the perfect comfort food for those cold days. Or any day. Tons of flavor from the bacon, cream, onions and cheese.

Prep time: 10 min  |  Cook time: 40 min  |  Total: 50 min

Ingredients

1 medium onion, chopped
9 pieces of bacon, cut into large pieces

1 box Uncle Ben’s Wild Rice, cook according to box directions
4 cups half and half
2 cans cream of potato soup
2 cups cubed Velveeta

Instructions

  1. In a large pot, cook the onion and bacon pieces on medium-high heat until bacon is cooked and onion is soft.
  2. Once cooked, add cooked rice, half and half, potato soup and velveeta to the pot.
  3. Move heat to low heat and continue to stir occasionally until soup becomes thicker.

4. Once thickened, serve warm.
