Peanut Butter Cup Crack Brownies

You may have seen this one floating around Facebook lately. A lot of my friends shared this recipe, so I wanted to give it a try to see if it is worth the hype. Anything with Reese’s Peanut Butter cups and crack bars in the title, I’m on board. 

I gotta say, these are really easy to make and they are pretty darn good. The only critique I have is that the layers seem to fall apart pretty easy and they are very, very rich. I am president of the pb and chocolate fan club, but this was a lot of chocolate. I do love the top layer of chocolate and rice krispies, really good crunch added to the softness of the pb cups and brownie. 

This recipe did go pretty far because you can cut them into smaller bite size pieces due to the richness and people will still be satisfied. Plus it’s not all the way from scratch which makes it easy and time saving but still pretty darn impressive.

Peanut Butter Cup Crack Brownies

Ingredients

1 box brownie mix
1/2 cup salted peanuts, chopped
12 peanut butter cups, chopped
2 cups semi sweet chocolate chips
1 tablespoon butter
1 and 1/4 cup creamy peanut butter
1 3/4 cups Rice Krispies cereal
1 teaspoon vanilla extract
1/4 teaspoon salt

Instructions

1. Bake the brownies according to the box directions in a 9×9 pan. Line with foil, parchment paper or spray with non- stick spray.
2. Take the brownies out with 5 minutes left of baking, sprinkle the chopped peanut butter cups and peanuts over the top of the warm brownies. Return to the oven for 5 more minutes.
3. Once you pull the brownies out of the oven, spread the peanut butter cups/peanut mixture with a knife or off-set spatula so you have a nice smooth layer. Let brownies cool.
4. Combine the chocolate chips, peanut butter and butter in a microwave safe bowl. Microwave for 1 minute then stir. Then microwave for 20 second increments, stirring after each until the mixture is melted and smooth.
5. Stir the cereal, vanilla and salt into the melted chocolate mixture until all combined.
6. Pour the chocolate mixture over the brownies and smooth with a spatula. Chill in the fridge for about 2 hours. Then remove and cut into bars. I found that if I kept these at room temperature for too long, they became messy and the layers fell apart. I recommend storing in the fridge.
