Here’s how my life goes: “Oh look it’s national s’mores day, I should probably make some s’mores and share it on the site.” Cut to 3 weeks later me sharing a s’mores recipe on the site. And thus, sums up my life. Sigh. 

I was looking for something easy and yummy to take with us when we went to the lake a few weekends back. Low maintenance, throw it in a ziploc and snack. I found that not only was it easy, but it’s highly addictive. No mixer needed, just melt, spread and fridge. The first time I made it I only had half milk chocolate so I used half semi sweet, also didn’t have enough marshmallow fluff or graham crackers. Did that stop me? Heck no and it was still delicious. But really, how can you go wrong with chocolate, marshmallow and graham crackers?

So the second time around, I made it with all milk chocolate, enough fluff and added more graham crackers. Even better than the first round. Please accept my apology for my tardiness on national s’mores day. I wish I could say with confidence this will be the last time it happens, but it won’t be. I definitely missed national dog day, sorry abby. I feel like those come around every couple months though, so I’ll pick it up the next time around. 

I urge you to give this recipe a try, super easy and pretty much fail proof. It’s addicting and people keep coming back for more. I put mine in the fridge in between snacking, but I think it tastes best almost room temperature.

S’mores Bark

The best combination of flavors: chocolate, chocolate and marshmallow. Easy to make and even easier to snack on.

Ingredients

3 1/2 cups milk chocolate chips
1/2 cup white chocolate chips
1 cup marshmallow fluff
5 sheets graham crackers

Instructions

1. Melt 1 1/2 cups milk chocolate chips (not all of them) in the microwave in 30 second intervals until melted and smooth. Spread over a wax or parchment paper lined baking sheet. Place this layer in the fridge for about 30 minutes or until hard.
2. Melt the white chocolate chips in the microwave then add the marshmallow fluff and microwave 30 seconds more. Stir all together until smooth. Quickly spread this mixture over the milk chocolate layer.
3. Crumble the graham crackers over the marshmallow layer. Refrigerate again for about 30 minutes or until hardened.
4. Melt the other portion of the milk chocolate chips and then pour/spread over the graham crackers. Place the bark in the freezer for an hour or so and then remove and break apart. Keep refrigerated after this.
