Fruit Pizza is one of those desserts that I can eat a lot of in one sitting. I mean, a lot. It’s got a little sweet, some crunch, some smooth and the freshness of the fruit topping. I love it and quite possibly could eat the entire thing. (much like regular pizza) And it’s always served at a party or a brunch with other people around, so I have to take a beat and talk myself out of taking the most giant piece. 

I decided to take the classic American fruit pizza and make it into little individual fruit pizza cookies. Luckily I made these little gems at home this time around so I can eat as many as I want and I don’t have to share. Well, I guess I’ll share with Dave and Leah. Actually, Leah ended up eating the fruit off the top and feeding me the cookie part. She doesn’t get that from me. 

This is a super easy sugar cookie recipe that takes no time at all, plus an easy cream cheese frosting. These are a perfect little summer and 4th of July dessert that everyone will go crazy for.

Fruit Pizza Cookies

This is a super easy sugar cookie recipe that takes no time at all, plus an easy cream cheese frosting. Top it with your favorite fruit slices and you have a delicious treat.

Prep time: 10 min + chill time  |  Cook time: 12 min  |  Total: 22 min + chill times

Ingredients

1 1/2 cups sugar
2 1/2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
14 tablespoons unsalted butter, room temperature
2 teaspoons pure vanilla extract
2 large eggs
FOR THE FROSTING
12 ounces cream cheese, room temperature
7 1/2 Tablespoons unsalted butter, room temperature
1 teaspoon pure vanilla extract
1 3/4 cups powdered sugar
fresh fruit for decoration

Instructions

1. Beat the butter and sugar together in a mixer with a paddle attachment until light and fluffy. About 3 minutes. Add the vanilla and eggs and mix until combined.
2. Add in the flour, baking powder and salt, mix again until combined. Place dough on a floured parchment paper and roll out to 1/4 to 1/2 inch. Cover the dough with another piece of parchment and chill in the fridge for at least 30 minutes.
3. Preheat oven to 350 degrees. Take dough out of the fridge and using a cookie cutter, cut out desired shape. Transfer to a cookie sheet lined with a Silpat or parchment. Bake for about 12 minutes or until edges just begin to turn light brown. Remove from the oven and let cool completely.
4. FROSTING: Mix cream cheese, butter, vanilla and powdered sugar all together until smooth. Spread over the cookie and then decorate with any fruit you choose.
5. Sit back and watch these things disappear. Be sure to stash a few away for yourself.
