I’ve been trying to integrate more “healthy” desserts into my bag o’ tricks lately. Don’t worry, I’m still all about the indulgence in desserts but it’s called balance, right? Or at least that is what I keep telling myself every. single. monday.

These, my friends, are on the healthy side but don’t feel like it. They taste like a mix of a brownie and a muffin. Dave had no clue they were even a “skinny” version. No flour, low sugar and SO easy. You can control how many chocolate chips you want in these as well. (Might I suggest, a lot)

Skinny Peanut Butter Chocolate Muffins

Ingredients

1/4 cup cocoa powder

2 tablespoons oat flour (put regular oats in a food processor and blend until powder)

1/2 teaspoon baking soda

1/4 teaspoon baking powder

1/4 teaspoon salt

2 tablespoons brown sugar

1/2 cup creamy peanut butter

1/4 cup unsweetened applesauce

1/4 cup vanilla Greek yogurt

1 teaspoon pure vanilla extract

2 tablespoons honey

1 large egg

5 tablespoons dark chocolate chips

Instructions

  1. Preheat the oven to 350 degrees. Spray a muffin tin with non stick spray. (don’t use cupcake liners)
  2. In a large bowl, whisk together the cocoa powder, oat flour (blend regular oats until they are a flour consistency), baking soda, baking powder, salt, and brown sugar.
  3. In a separate bowl, combine the peanut butter, applesauce, greek yogurt, vanilla, and honey. Stir until completely combined.
  4. Add the dry ingredients to the wet ingredients and mix together. Add in the egg and mix until just combined.
  5. Fold in the chocolate chips and top each muffin with a few more. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.

  1. My family loves this recipe and I make it often! I just realized I don’t have any Greek yogurt (vanilla or otherwise). Any substitutions you recommend?
