Does anyone ever turn down nachos? Nope, didn’t think so. They are amazing, that’s why. We love them so much in our house, that we probably have them once a week. I ain’t mad at it either because it’s easy and mama likes easy.

Best part is you can make these your own, whatever you like then that’s what you get. This time I used ground beef, but we’ve used chicken, steak and pork and all of them make me happy. Layer of chips, layer of cheese, layer of meat, layer of veggies, more cheese and then top with sour cream, salsa and guacamole. Best night ever.

I’m all about easy weeknight dinners, what are your favorites?

1 pound ground beef
2 cloves garlic, minced
1 (1.25-ounce) package taco seasoning
1 package tortilla chips
1 (15-ounce) can black beans, drained and rinsed
1 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese

3. Place tortilla chips in a single layer onto the baking sheet. Top with ground beef mixture, black beans, onion, jalapeno (optional) and cheeses.
4. Place into oven and bake until heated through and the cheeses have melted, about 5-6 minutes.
