I bought @pretzilla tiny rolls the other week and after slathering them in butter, honey and salt was hooked for life. Then the mini pretzel buns jumped in my cart the next time I was at the store, so clearly I needed to figure something to make with them. Hamburgers were too obvious, so I decided to make these delicious vehicles into the ultimate breakfast sandwich. Crisp bacon, sheet pans eggs with spinach and gooey cheese with this pretzel roll is my kind of breakfast. So good!!

Nothing too complicated about this one, I baked the bacon and the eggs to make life easier and assembled. Trick is to wrap up the whole sandwich together at the end and warm up in the oven to get everything nice and gooey with cheese. Perfect for a weekend morning breakfast or make ahead to grab and go during the week. The pretzel rolls are really what set these over the top.

Pretzel Roll Breakfast Sandwich

Easy to make breakfast sandwiches layered with egg, bacon, spinach and cheese all between a pretzel roll. The pretzel roll really makes these sandwiches stand out!

Ingredients

1 package Pretzilla Pretzel rolls
1 pound bacon
8-10 eggs
1/4 cup milk
pinch of salt
2 cups spinach
sliced cheese (I used cheddar)

Instructions

Sheet Pan Eggs: Preheat oven to 425 degrees. In a medium sized bowl, whisk the eggs, milk and salt. Add spinach and whisk again. Spray a medium sized sheet pan with edges with non stick spray. Pour egg mixture onto sheet pan and bake for 10 minutes or until done. Cut into squares.
Oven Cooked Bacon: Preheat oven to 425 degrees. On a sheet pan with edges, cover in foil. Place a cooling rack on top of foil and spray with foil. Place bacon on the cooling rack. Bake at 425 degrees for about 15-20 minutes until desired crispiness.
Assemble your Pretzel sandwiches and then wrap each individually in foil or parchment. Set the oven temperature for 350 degrees. Place sandwiches on the oven and warm for about 7 minutes. Remove, cool slightly then enjoy!!
