Elvis Dippers came about from a need to clear out the 432 frozen bananas I had in my freezer. I didn’t want to make another banana bread (even though I LOVE banana bread). I just wanted something easy. So what else goes well with bananas…peanut butter. Obviously. So I mixed up some of the ripe bananas and some peanut butter and made a little graham cracker sandwich. But what was missing? Chocolate, of course!

And then was born Elvis Dippers. I cannot take credit for the name, that is the genius work of Steph from @awholelottaoven. Perfect name for these little gems.

We all loved these in out house and they stay in the freezer so you can enjoy them anytime you need a little sweet, but healthier fix.

Elvis Dippers

Banana, Peanut Butter, Graham Cracker and chocolate, of course. A perfect little healthy treat.

Prep time: 10 min + 30 min freeze time  |  Cook time:   |  Total: 40 min

Ingredients

35 ripe bananas

1/2 cup peanut butter

810 graham cracker sheets broken into fourths

1 cup dark chocolate chips for dipping

Instructions

  1. In a medium size bowl, mash the ripe bananas and peanut butter until mixed together. Set aside.
  2. On a baking sheet lined with parchment or foil, line up the graham cracker fourths in a row.
  3. Spread the banana and peanut butter mixture on one graham cracker fourths then take another fourth and top the spread to make a sandwich. Continue until all graham cracker sandwiches are made.
  4. Place in the freezer for 15-30 minutes.
  5. While sandwiches are in the freezer, melt the dark chocolate in the microwave. Melt for 30 seconds at a time and stir after each time. Continue until smooth.
  6. Take the sandwiches out of the freezer and dip 1/2 of each dipper into the melted chocolate. Place bake on the baking sheet until chocolate is set.
  7. Keep in an airtight container in the freezer.
