Queso Fundido Recipe

Is it really a football party without a cheese dip? Oh man, I could eat an embarrassing amount of cheese dip if I didn’t have to share with others. I know when I have parties, I make all this food to share with people, but in most cases I make dishes that I just want to eat. And I get very excited when there are leftovers that I can eat by myself on the couch the next day. Other people have these fantasies too, right? Please?

Cheese dips always seem to be the biggest hits at parties and the ones I grew up on used Velveeta as the staple. I will eat these dips until the day I die, no one can tell me how bad Velveeta is, I don’t care because I love them. But I also love the Queso Fundido dips at restaurants that have actual cheese in them and they have the best stringy quality when you dip your chip into it. Plus all the good grease that pools on the sides. (This is not a health food blog in case you didn’t know before) So, I bring to you a recipe for a super yummy Queso Fundido. Not hard, one pan and lots of veggies and meat within the stringy cheese.

Queso Fundido

Cheesy and packed with delicious stuff, just like a restaurant!

Prep time: 10 min  |  Cook time: 5 min  |  Total: 15 min

Ingredients

8 ounces chorizo or regular sausage

1 green pepper, chopped

1 yellow pepper, chopped

1 medium onion, chopped

16 ounces monterey jack, grated/shredded

8 ounces white cheddar, grated, shredded

chili powder

2 roma tomatoes, diced

cilantro

tortilla chips or veggies for dipping

Instructions

  1. Preheat oven to 400 degrees. In a cast iron pan or oven safe pan, cook the sausage until done all the way through. Remove from the pan and set aside.
  2. In the same pan, cook the green pepper, yellow pepper and onion until soft and slightly charred. Remove from the pan and set aside. Turn off the heat.
  3. Take 1/3 of the shredded cheese and add to the bottom of the same pan. Top with 1/3 of the veggies and the sausage. Repeat with another layer of cheese, veggies and sausage and then a 3rd layer to finish.
  4. Sprinkle with chili powder over the top. Then place in the oven for about 4-5 minutes until totally melted.
  5. Remove from the oven and serve with tortilla chips and veggies. Enjoy!
