Lemon Butter Chicken Zoodles

Where are my zoodle fans? I love zucchini but admittedly so, we don’t have zoodles that much and I don’t know why because they are DELICIOUS! Also admittedly, I added butter, lemon and garlic to them so nothing that starts with butter, lemon and garlic ever ended badly.

Low carb meal that doesn’t feel like I’m being deprived. Again, because of butter, lemon and garlic. Sense the theme?

So easy to throw together and really a great recipe for one of those busy weeknights when you want something good, something healthy and something quick. Done, done and done!

Lemon Butter Chicken Zoodles

Ingredients

23 chicken breasts

Olive oil

kosher salt

black pepper

6 Tablespoons Butter

1 Tablespoon minced garlic

1/4 cup lemon juice plus 1 lemon sliced

1 lb zoodles

4 cups fresh spinach

1/4 cup grated parmesan, plus more for garnish

1/4 teaspoon red pepper flakes

Instructions

  1. Prepare chicken breasts with a small sprinkle of salt and pepper. Then add a drizzle of olive oil in a skillet over medium heat. Cook Chicken breasts for about 7 minutes on one side, flip over and then about 6 minutes on the other side. Cook a couple minutes less if using thin cut chicken breasts. Remove chicken from the pan and let rest while you cook the zoodles.

2. In the same skillet on medium heat, add butter and once melted add the minced garlic and cook for about 1 minute. Pour in lemon juice and lemon slices.

3. Add zoodles, spinach, parmesan and red pepper flakes (eliminate red pepper flakes if you do not want it to have a kick). Cook and stir until zoodles start to soften and spinach starts to wilt. Sprinkle with salt and pepper.

4. Slice chicken and add back to zoodles mixture, toss to combine. Top with more parmesan before serving. Enjoy!
