I’ve never been one to jump at a gluten free pancake or the protein pancake or anything other than a classic pancake. Well, this pancake has me changing my tune. Big time.

The Granola Gourmet has an amazing Bourbon Maple granola. It’s a warm and cozy flavor that tastes so good by itself or in a variety of dishes. Nicole, owner of The Gourmet Granola, mentioned she wanted to see if it would be good in pancakes. The answer is yes, so much yes!

I took the granola and blended it up to make myself a bourbon maple granola flour. Right?? Then used it in one of my favorite pancake recipes. I added some sprinkles of granola on top of the pancakes as well. The texture is perfectly fluffy and the flavor is perfectly cozy. Topped with maple syrup and you have a gluten free delicious breakfast! I am so proud of these, love them!!

Bourbon Maple Granola Pancakes- Gluten Free

The most delicious Bourbon Maple Granola Pancakes that are Gluten Free!! Make your own granola flour using The Gourmet Granola’s Bourbon Maple granola for these incredibly easy and delicious pancakes.

Ingredients

1 1/2 cups The Granola Gourmet Bourbon Maple granola flour

1 1/2 teaspoons baking powder

1/2 teaspoon kosher salt

1 egg

1 cup milk

2 Tablespoons canola oil

1 Tablespoon maple syrup

Maple Syrup and granola for topping

Instructions

  1. To make granola flour- Pulse/blend 1 1/2 cups granola until you have a fine powder. 1 1/2 cups granola equals 1 1/2 cups granola flour.
  2. In a small bowl, combine the granola flour, baking powder and salt. Stir to combine.
  3. In another bowl, mix the egg, milk, oil and syrup. Whisk until combined. Add wet ingredients into the dry and mix until just combined
  4. Let batter sit for 5-7 minutes, it will thiken as it sits. Lightly grease a pan and set to medium heat. Pour about 1/4 cup of batter onto the pan. Sprinkle a small handful of whole granola onto the top of the pancake that is still wet. Turn when bubbles start to form on top in the batter. Flip and then cook again until golden, about 2 minutes.
  5. Serve with maple syrup and granola sprinkled on top. Enjoy!
