If this isn’t a solid midwest meal, I don’t know what is? And it’s so good!! A little beef, a little ketchup, a little mustard, a little relish…and of course tater tots. Oh, and cheese. Lots and lots of cheese.
Some midwest states call this a “hot dish” but I grew up just calling them casseroles. I think Nebraska mainly says casserole, tell me if I’m wrong. Hot dish is more a Minnesota thing? Either way, this one is ALL midwest and comforting. Perfect for an easy dinner that your family will love! Nothing fancy but all delicious.

1 pound ground beef
1/3 cup diced sweet onion
2/3 cup ketchup
2 Tablespoons yellow mustard
2 Tablespoons dill pickle relish
2 Tablespoons butter
2 Tablespoons all-purpose flour
1 1/2 cups milk
1/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
2 cups Cheddar Shredded Cheese, divided for insude and on top
32 ounce bag Tater Tots

My family loves this recipe! Any suggestions on how to make it ahead?
So happy to hear that! You could make the base casserole a day or so ahead, refrigerate and then add the tater tots on tot right before baking.
