Got foil? Good, let’s get started. This salmon baked in foil is ridiculously easy, so good and uses foil so no major cleanup. Weeknight dinner winning friends!! The topping has a bit of an Italian flair with some tomatoes, onions, olive oil, thyme and oregano. Perfecto! (is that italian or spanish?)

Throw it in some foil, add your chopped tomato concoction and set it in the oven. We added broccoli and had ourselves a healthy and easy dinner with lots of flavor. Grab your salmon and foil and get to cookin!

Salmon Baked in Foil

Ingredients

4 Salmon Filets

3 Roma Tomatoes

1 small onion

2 Tablespoons lemon juice

1 teaspoon oregano

1 teaspoon thyme

olive oil

salt and pepper

Instructions

  1. Preheat oven to 400 degrees.
  2. Drizzle olive oil over salmon filets, sprinkle with a generous pinch of salt and pepper.
  3. Chop tomatoes and onion and place in small bowl. Drizzle 1 Tablespoon of olive oil over tomatoes and onions. Add thyme and oregano and a pinch of salt and pepper. Stir all together so everything is coated.
  4. Place salmon filets oil side down into a foil square. Spoon tomato mixture over the salmon. Fold up foil and seal up tops so fish is enclosed.
  5. Bake for about 25 mintues. Remove and serve!
