This is a Mexican Dip recipe that we’ve been making in our family forever. It’s not fancy, but it’s delicious. We call it Almost a Meal Dip and that basically sums it up. I could (and have) continually dipped chips into this dip and had it as my entire meal. 

What is in Almost a Meal Dip?

Not much in this Mexican Dip recipe and I think that’s what makes it great. Simple, classic, and really good. 

  • ground beef
  • refried beans
  • chopped chiles
  • Mexican shredded cheese
  • Taco Sauce

And chips, of course. 

How do you make this Mexican Dip?

This Mexican Dip Recipe with ground beef is really easy to make. Basically, you layer all the ingredients and bake it in the oven. What comes out is a bubbly, cheesy, melty dip full of all the classic Mexican flavors we all love. 

You start by cooking the ground beef in a skillet then adding the refried beans and mixing those together. 

From there, just layer. Ground Beef/Refried Beans on the bottom, green chiles, taco sauce and cheese, Bake and dip. 

Why Taco Sauce and not Salsa?

Excellent question. Short answer- that’s how we’ve always done it. Long answer- The Taco Sauce seems to mix into the ground been while baking more and give it a spicy flavor. The salsa just doesn’t bake as well. 

You can absolutely use salsa if you want, but the true way is with a bottle of Taco Sauce.

Almost a Meal Mexican Dip

A simple Mexican Dip recipe using ground beef and all the classic flavors. Baked together in a melty, cheesy dip ready for tortilla chips.

Ingredients

1 lb ground beef

1 can (16 ounces) refried beans

2 cans (4 ounces each) chopped green chiles

2 cups Mexican Blend shredded cheese

1 large bottle taco sauce

Tortilla chips for dipping

Instructions

  1. Preheat oven to 400 degrees. Spray a 9×13 baking dish with nonstick spray.
  2. In a large pan, brown the beef until cooked through. Drain grease. Add refried beans to the beef, mix together.
  3. Spread the beef mixture on the bottom of the baking dish. Top with the green chiles
  4. Then top with the taco sauce and shredded cheese.
  5. Bake at 400 degrees for 20-25 minutes until bubbly.
  6. Let cool slightly then serve with tortilla chips.
