This Honey Roasted Carrots recipe will become a new favorite to add to dinner. It’s quick and easy, plus it’s delicious. 

I’m always looking for different ways to change up veggies and this honey roasted carrots recipe is a winner. Roasting carrots brings out the natural sweetness, then paired with the sweetness of the honey, a pinch of salt and those crisp roasted bits, these carrots are addicting. Always a hit. 

Why roast the carrots?

Roasting vegetables enhances the natural flavors of the vegetable, in this case carrots become a little bit sweeter and earthier. When you boil, saute, or steam a carrot,(although still delicious) it doesn’t bring out that natural caramelization. This honey roasted carrots recipe combines that natural sweetness, earthy flavors, a little sit of salt and some extra sweetness with honey. 

Do I need to peel the carrots?

Nope. Well, technically it’s your choice. You can peel the carrots if you like but it doesn’t affect the taste of the honey roasted carrots recipe. 

For me, I buy the bag of baby carrots of sticks so I can just dump the bag onto the sheet pan and call it a day.

Honey Roasted Carrots

Sweet and savory, easy honey roasted carrots recipe. Perfect way to add some easy veggies to your dinner.

Ingredients

1 lb bag of baby carrots or sticks (or cut whole carrots into thin slices)

1/4 cup butter

1/4 cup honey

1/4 teaspoon salt

Instructions

1. Preheat oven to 400 degrees. Prepare a baking sheet with nonstick spray or a silicone mat.

2. Spread the carrots over the baking sheet in an even layer.

3. In a microwave safe bowl, melt the butter. Then add the honey and salt to the melted butter and stir to combine.

4. Pour the butter mixture over the carrots and stir around to make sure all the carrots are covered.

5. Roast in the oven for 25-35 minutes until the carrots are soft and the glaze has caramelized a bit.

6. Remove from the oven and sprinkle some chopped parsley over the carrots, if desired. Serve and enjoy!
