Moose Tracks Ice Cream Cake Recipe

Ice Cream Cakes are a perfect addition to a celebration…or really just because. I love an ice cream cake because I love all the layers of different flavors and textures. This Moose Tracks Ice Cream Cake takes my favorite ice cream flavors and mixes them all together in one delicious ice cream cake.

Ice Cream Cakes may seem like a difficult dessert to make, but it’s truly easy and the payoff is so delicious. For this Moose Tracks Ice Cream Cake, I used all the main flavors of Moose Tracks Ice Cream: peanut butter, fudge and caramel. Plus a brownie base layer and some added crunch with an Oreo Cookie Crumble.

Keep reading to find out the steps and tips to make this delicious Moose Tracks Ice Cream Cake.

Why You’ll Love This Recipe

  • It’s way easier to make than you might think. Ice Cream Cakes are basically assembling layers together. You can use premade to make each layer even quicker.

  • The combination of flavors. The mix of classic Moose Tracks flavors like peanut butter, chocolate, caramel and vanilla.

  • The combination of textures.  Ice Cream Cake offers a mix of textures that adds to the enjoyment of this classic dessert too. Soft brownie base, smooth ice cream mixed with the crunchy crumble topping make a perfect bite.

  • Make this one ahead. Ice Cream Cakes are the perfect dessert idea to make ahead of time. You can store them covered in the freezer for several weeks

Ingredients

  • Brownie Base: Make your own from scratch, use a box mix or buy one from the store.

  • Oreo Cookie Crumble: Grab a ziploc, some Oreos and get to smashing. I use the back of a metal spatula. You can also use a food processor to get them into a finer texture.

  • Moose Tracks Ice Cream: No idea the origin of the name of this ice cream, but it’s delicious. Vanilla, peanut butter, hot fudge, peanut butter cups.

  • Hot Fudge: Grab a jar of hot fudge from the ice cream aisle, pour and spread.

  • Peanut Butter Topping: I make my own peanut butter topping, find the super easy recipe here. Or grab a jar at the store.

  • Whipped Cream: Homemade whipped cream (recipe below) or some Cool Whip is perfect to top off this Ice Cream Cake.

Step By Step Instructions

Prep the ingredients: If you are making your own brownies, then bake and be sure to cool completely. Then I crush the Oreos and set those aside as well. Onto the whipped cream next, whip that up and store in the fridge until ready to use.

* Ice Cream tip– before you are ready to assemble the ice cream cake, set the ice cream out on the counter to soften up. This makes it easier to spread out evenly.

Assemble: After your ingredients are prepped and ready, all you need to do is assemble the layers. Scoop the ice cream on top of the brownies and spread out evenly. Place in the freezer for about 30 minutes to set.

Next, pour the hot fudge over the ice cream and spread that out. Then drizzle the peanut butter topping over the hot fudge, you can swirl them together if you are feeling it. Cover that layer with the crushed up Oreos. Press them down lightly with your hand so they set into the fudge. Back into the freezer for another 30 minutes to set.

Lastly, spread out the whipped cream over top of everything. Top with the remaining crushed Oreos. Cover and place back into the freezer for several hours or overnight until ready to serve.

Serve: When you are ready to serve the cake, remove from the freezer and set out for about 10 minutes. This will soften it a bit and makes it easier to cut pieces.

Recipe Tips

  • Make the layers ahead of time and then assemble when you are ready.

  • Use a box brownie mix or store bought for the base layer.

  • If making your own brownies, be sure to cool completely before ice cream cake assembly.

  • Set the Moose Tracks Ice Cream out on the counter about 15 minutes before assembly to soften it enough to spread out on the cake.

  • Make sure to place the finished ice cream cake back into the freezer for at least a few hours to set completely.

  • To make cutting slices easier, run the knife under hot water before cutting.

Storing and Serving

Storing: Moose Tracks Ice Cream Cake can be stored covered in the freezer for about a week.

Serving: Remove ice cream cake from the freezer about 10 minutes before serving. This helps soften the ice cream up a bit to make it easier to cut through. You can run a knife under hot water to make it smoother as well.

Ingredients

Brownie Base- box mix, store bought, or homemade brownie recipe

Jar of Hot Fudge

Peanut Butter Topping

1/2 cup condensed milk

1/2 cup creamy peanut butter

1 teaspoon pure vanilla extract

5 Tablespoons water

Oreos- 20, crushed

Moose Tracks Ice Cream

Chocolate Syrup

Whipped Cream (Or Cool Whip)

1 cup heavy cream

2 Tablespoons sugar

1 teaspoon pure vanilla extract

Instructions

1. If baking brownies from a box mix or homemade, be sure to cool brownies completely before assembling.

2. Prepare layers: Peanut Butter Ice Cream Topping-  In a small saucepan on low to medium heat, add the condensed milk, peanut butter, and vanilla. Stir and heat until smooth. Add water one Tablespoon at a time, until desired consistency. Set aside.

3. Whipped Cream: In a medium bowl, add heavy cream, sugar, and vanilla. Using a handheld mixer or a stand mixer, mix on medium high speed for a few minutes until medium peaks form. Cover and place in the fridge until ready to use.

4. Oreos: Place Oreos in a Ziploc. I like to to use the back of a metal ladle to pound and crush the Oreos into pieces. If you want a finer texture, keep pounding or you can use a food processor to make them more crumb like.

5. Assemble: Pour the hot fudge over the brownie base and spread out evenly. Heat the jar of hot fudge in the microwave for about 30 seconds to get it more pourable if needed.

6. Drizzle the peanut butter sauce over the hot fudge layer. You can swirl them together if you are feeling it. Then sprinkle the Oreos over the hot fudge/peanut butter layer evenly and then gently press them down to set into the hot fudge. Place the cake innto the freezer to set up for about 15 minutes. At this time, remove the Moose Tracks Ice Cream and place on the counter for about 15 minutes to soften.

7. Next, scoop the Moose Tracks Ice Cream onto the Oreo layer and spread out evenly. Use the entire quart. Drizzle chocolate syrup over the ice cream. (optional, but why not). Place back into the freezer for another 15 minutes to set.

8. Remove from the freezer and spread the whipped cream or cool whip out evenly on top. Sprinkle more of the crushed Oreos over that.

9. Cover with plastic wrap or foil and then place in the freezer for a few hours or ideally overnight to set up completely.

10. When ready to serve, remove the cake from the freezer and set out for about 10 minutes to soften slightly,. To help with slicing, dip a knife in hot water before cutting.

11. Place covered cake back in the freezer when not serving or to store for up to 2 weeks.
