I LOVE an easy dinner idea, it’s my favorite. Something that is really good but doesn’t take up an hour of my time prepping and using every bowl or plate in my kitchen. This number meets all of my criteria. Easy, not many ingredients, one pan, comes together in about 15 minutes. Plus, healthy. What?

This is an Egg Roll in a Bowl and it’s basically just the insides of an egg roll without the fried wrapper. I like to add the wonton strips to the top so I guess not totally without something fried. Still, better than the actual egg roll. Balance people, balance.

Egg Roll in a Bowl

Ingredients

1 pound ground chicken

11/2 cups sliced mushrooms

1 small onion, chopped

1 Tablespoon garlic, minced

1 teaspoon ginger

4 Tablespoons of low sodium soy sauce

1 package (14 ounces) coleslaw mix

2 Tablespoons sesame oil

Serve with wonton strips, rice and sweet and sour sauce

Instructions

  1. In a large skillet on medium heat, drizzle some olive oil in pan. Add ground chicken and break up, add mushrooms, onions, garlic and ginger. Cook until chicken is no longer pink and veggies are soft.
  2. Add soy sauce and stir until well mixed. Add colesaw mix and cook until starting to wilt, 2-3 minutes. Stir in sesame oil.
  3. Remove from heat and sprinkle with wonton strips if desired . Eat with rice and sweet and saur sauce. Enjoy!
