Bean and Cheese Taco Bites

I wasn’t even sure if I should write up a recipe for these because they are so easy. However, I love them so much I just had to share them and all their simple glory. Originally, I wanted to make little bean and cheese chip tacos but that didn’t really turn out how I envisioned. Then I just ate these little bite size all in one nacho and I was hooked. easy for parties so people can pick up and eat. Top with some pico, guac or sour cream (or all of the above) and it’s basically a football party in a bite. Love these!

Bean and Cheese Taco Bites
It’s like a mexican dip on each taco. Easy to make and such great flavors.
Ingredients
30 unbroken multigrain tortilla chips
1–1/4 cups refried beans
2 cups shredded Monterey Jack and cheddar cheese
Instructions
- Preheat oven to 350 degrees. Spray a large baking sheet with non-stick cooking spray.
- Lay the chips out evenly with space in between on your baking sheet. Spread about 2 teaspoons of refried beans over the top of the chip.
- Sprinkle about a tablespoon of shredded Monterey Jack and cheddar cheese over the beans on each chip.
- Bake the chips for 5-7 minutes or until the cheese is melted. Remove from oven and serve with salsa, sour cream and guacamole for dipping.
